Lisa Apfelberg

Lisa Apfelberg is our Managing Executive Director. She has worked at the intersection of Judaism and veganism for five years and worked for the Jewish community her entire career. She is passionate about teaching people how to cook and eat plant-based foods and has been doing so for decades. She and her family have recently moved to a tiny house on an organic farm in Austin, TX. She is currently studying for her doctorate in Jewish Studies at the Spertus Institute and loves to use Jewish texts and traditions to teach about our important mission.
